The Blackberry Royal is a fresh take on the classic Kir Royale, a French cocktail made of Crème de Cassis (blackcurrant liqueur) and Champagne. The Kir Royale dates back to the post Second World War era, where Félix Kir, the mayor of Dijon, served the Kir cocktail to visiting representatives. Kir started as a mix of Crème de Cassis and white wine. As the drink grew in popularity, variations spread throughout France including the Kir Royale, Kir Pêche (peach) and Kir Impérial (raspberry). This Blackberry Royal is flavored with a Blackberry Shrub, a mixture of blackberry juice, balsamic vinegar, sugar and rosemary.
